Creamy and Cheesy Potato and Smoked Sausage Casserole


3 cups potatoes, peeled, boiled, and diced while cool

4 teaspoons butter

4 teaspoons flour

2 cups milk

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 kilogram Velveeta cheese, cut into cubes

1/2 cup shredded sharp cheddar cheese

1 pound skinless smoked sausage, cut into half-moon pieces

1/8 teaspoon paprika


Preheat the oven to 350°F (175°C).

Cook the skinless smoked sausage in a cast iron skillet for about 15 minutes, stirring frequently, until slightly browned.

Meanwhile, place the cooked and diced potatoes into a 2-quart saucepan.

In a separate saucepan, melt the butter over medium heat.

Add the flour and whisk until smooth.

Gradually add the milk, whisking constantly, until the mixture is smooth.

Add the Velveeta cheese cubes to the saucepan and stir until melted and smooth.

Pour the cheese sauce over the potatoes and meat in the saucepan, stirring gently to combine.

Transfer the mixture to a greased 9x13 inch baking dish.

Sprinkle the shredded sharp cheddar cheese on top of the mixture, followed by the paprika.

Bake in the preheated oven for 35-45 minutes, or until golden brown on top.
