Chocolate Layer Cake with Cookies and Cream Filling
Ingredients:
For the Cake:
1¾ cups all-purpose flour
2 cups granulated sugar
¾ cup unsweetened cocoa powder
1½ tsp baking powder
1½ tsp baking soda
1 tsp salt
2 eggs
1 cup whole milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
For the Cookies and Cream Filling:
1 cup heavy cream
8 oz cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
1 cup crushed Oreo cookies (or similar)
For the Chocolate Frosting:
¾ cup butter, softened
½ cup unsweetened cocoa powder
3 cups powdered sugar
1/3 cup heavy cream
1 tsp vanilla extract
Directions:
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla, and beat on medium speed for 2 minutes.
Stir in boiling water (batter will be thin). Pour it into prepared pans.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes; remove from pans to wire racks. Cool completely.
For the Filling:
Whip the heavy cream until stiff peaks form.
In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
Fold in the whipped cream and crushed cookies.
For the Frosting:
Cream butter until light and fluffy.
Mix in cocoa and powdered sugar alternately with heavy cream and vanilla, beating to spreading consistency.
Assembly:
Place one cake layer on a serving plate, spread with cookies and cream filling.
Top with the second cake layer and spread frosting over the top and sides of the cake.
