4 cups broccoli florets (about 2 heads)

3 tablespoons olive oil

4 cloves garlic, thinly sliced

1/2 teaspoon crushed red pepper flakes (optional for a little heat)

1/4 cup freshly grated Parmesan cheese

1 tablespoon lemon zest (from 1 lemon)

2 tablespoons lemon juice (from the same lemon)

Salt and pepper, to taste

2 tablespoons pine nuts (optional)

Additional grated Parmesan for serving


Preheat Oven: Preheat your oven to 425°F (220°C).

Prep Broccoli: Wash and dry the broccoli florets thoroughly.

Mix Ingredients: In a large mixing bowl, combine broccoli, olive oil, garlic, red pepper flakes (if using), and a pinch of salt and pepper. Toss until the broccoli is well coated.

Roast: Spread the broccoli mixture in a single layer on a baking sheet. Ensure they're spaced out to roast properly without steaming. Roast in the preheated oven for about 20-25 minutes, or until the broccoli is tender and the edges are crispy.

Add Parmesan: Remove the tray from the oven and sprinkle the broccoli with the grated Parmesan cheese. Toss gently to coat. Return the tray to the oven for an additional 3-5 minutes, or until the cheese is melted and slightly golden.

Final Touches: Once out of the oven, transfer the broccoli to a serving dish. Drizzle with lemon juice, sprinkle with lemon zest, and top with additional grated Parmesan and pine nuts if using.
