Peach Cobbler Cheesecake:

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup melted butter

1/4 cup sugar

For the Cheesecake Filling:

3 packages (24 ounces) cream cheese, softened

1 cup sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

For the Peach Cobbler Topping:

4 cups sliced fresh peaches (or you can use canned peaches, drained)

1/2 cup sugar

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

2 tablespoons cornstarch

1/2 cup water

1 tablespoon lemon juice

For the Streusel Topping:

1/2 cup all-purpose flour

1/4 cup brown sugar

1/4 cup cold butter, diced

Instructions:

Preheat your oven to 325°F (163°C).

In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar for the crust. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until well combined.

Pour the cream cheese mixture over the crust in the springform pan.

In a saucepan, combine the sliced peaches, sugar, cinnamon, nutmeg, cornstarch, water, and lemon juice for the peach cobbler topping. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool slightly.

Spoon the peach cobbler topping over the cheesecake filling in the pan.

In a small bowl, combine the flour and brown sugar for the streusel topping. Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Sprinkle the streusel topping over the peach cobbler layer.

Bake the cheesecake in the preheated oven for 1 hour or until the center is set. Let it cool completely in the pan on a wire rack.

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight before serving.

When ready to serve, run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan.
