Butter Tart Squares


For the Crust:

1 1/2 cups all-purpose flour

1/4 cup granulated sugar

1/2 cup unsalted butter, cold and cubed

For the Filling:

2 cups brown sugar, packed

2 large eggs

2 tablespoons all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon vanilla extract

1 cup raisins (optional)

1 cup chopped walnuts (optional)


Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Make the crust: In a medium bowl, combine 1 1/2 cups flour and 1/4 cup sugar. Cut in the butter using a pastry blender or two knives until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden.

Prepare the filling: In a large bowl, whisk together the brown sugar and eggs until smooth. Stir in 2 tablespoons flour, baking powder, and vanilla extract. Fold in raisins and walnuts, if using.

Assemble: Pour the filling over the baked crust, spreading evenly.

Bake for 20-25 minutes, or until the filling is set and the top is lightly browned. Let cool completely in the pan on a wire rack before lifting out using the parchment paper overhang. Cut into squares.
