Ingredients:


For the Crust:

- 1 1/2 cups graham cracker crumbs

- 1/3 cup unsalted butter, melted

- 2 tablespoons sugar


For the Cheesecake Filling:

- 4 (8 oz) packages cream cheese, softened

- 1 cup granulated sugar

- 4 large eggs

- 1 cup white chocolate chips, melted

- 1 cup dried cranberries


For the White Chocolate Ganache:

- 1/2 cup white chocolate chips

- 1/4 cup heavy cream


For Garnish:

- Fresh cranberries

- Rosemary sprigs


Directions:


1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.

2. In a bowl, combine graham cracker crumbs, melted butter, and sugar for the crust. Press into the bottom of the prepared pan.

3. In a large mixing bowl, beat cream cheese and sugar until smooth.

4. Add eggs one at a time, beating well after each addition.

5. Fold in the melted white chocolate and dried cranberries.

6. Pour the cheesecake filling over the crust in the pan.

7. Bake for 55-60 minutes or until the center is set.

8. Allow the cheesecake to cool in the pan, then refrigerate for at least 4 hours or overnight.

9. For the white chocolate ganache, heat white chocolate chips and heavy cream until smooth. Drizzle over the chilled cheesecake.

10. Garnish with fresh cranberries and rosemary sprigs before serving.
