Layered Mexican Casserole


Ingredients:


1 lb ground beef

1 onion, chopped

1 can black beans, drained and rinsed

1 can corn, drained

1 can diced tomatoes with green chilis, undrained

1 packet taco seasoning

1 cup sour cream

2 cups shredded cheddar cheese

6 flour tortillas (8-inch)

1/4 cup chopped fresh cilantro (optional for garnish)

Salt and pepper to taste

Directions:


Preheat oven to 375°F (190°C).

In a large skillet, cook ground beef and onion over medium heat until beef is no longer pink; drain.

Stir in black beans, corn, diced tomatoes with green chilis, and taco seasoning. Bring to a simmer and cook for 5 minutes. Season with salt and pepper to taste.

In a greased 9x13 inch baking dish, place two tortillas at the bottom. Spread half of the beef mixture over the tortillas, followed by a layer of sour cream and a layer of shredded cheese.

Repeat layers once more and top with the remaining tortillas, beef mixture, and cheese.

Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.

Let stand for 5 minutes before serving. Garnish with chopped cilantro if desired.
