Delight in these creamy, tangy bites wrapped in flaky puff pastry, drizzled with sweet vanilla glaze.


Ingredients:

For the Bites:

1 package (8 oz) cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh raspberries, plus more for garnish

1/4 cup white chocolate chips, melted

2 sheets of puff pastry, thawed

For the Glaze:

1/2 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Directions

Preheat and Prepare:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to ensure easy removal and cleanup after baking.

Prepare the Filling:

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Gently fold in the fresh raspberries and melted white chocolate, taking care not to crush the berries while ensuring they are distributed evenly throughout the mixture.

Assemble the Bites:

On a lightly floured surface, roll out the thawed puff pastry sheets. Cut each sheet into 3×3 inch squares.

Place a generous spoonful of the raspberry cream cheese mixture in the center of each square.

Fold the corners of the pastry over the filling, pinching them together at the center to seal. This will help contain the filling during baking and create a beautiful presentation.

Bake:

Arrange the assembled bites on the prepared baking sheet.

Bake in the preheated oven for 15-18 minutes, or until the pastry is puffed and turns a golden brown.

Prepare the Glaze:

While the bites are baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.

Finish the Bites:

Once baked, remove the bites from the oven and allow them to cool slightly on the baking sheet.

Drizzle them with the prepared vanilla glaze and garnish with additional fresh raspberries.
